Does math practice actually train your brain?

The honest version: arithmetic practice reliably makes you faster and more accurate at arithmetic, and at closely related tasks. It does not measurably raise general intelligence, and claims otherwise outrun the evidence. That is still worth doing — fast, automatic facts free up working memory for the parts of a problem that actually need thinking.

Third grade has all four operations available at small numbers, which makes random mixed practice possible for the first time. The useful difficulty is choosing: deciding what a question asks before answering it. Word problems fail here not on arithmetic but on picking an operation from a keyword rather than from the situation.

Do brain-training games really work?
They improve the skill you practise and things close to it, which is well supported. Broad transfer to unrelated abilities is not. Practising arithmetic makes you better at arithmetic — a genuinely useful outcome, just not the one the category is usually sold on.
Is mixed practice better than practising one operation at a time?
Both have a use. Practising one operation builds the facts; mixing them builds the habit of reading the problem before answering, which is what breaks down in word problems and on tests. Use single-operation practice to fix a gap and mixed practice to keep it.
